5 Day Vegan Meal Prep

Hi there readers, welcome back!
So most of you know by now that I am a vegan and that I love to make and cook new vegan meals as well as adapting my old favourite foods into things I can enjoy, well I also love to do my own weekly meal prep as I find it much more convenient. I usually don't prep anything for the weekend as these are the two days a week I'm likely to have lunch out with family or friends and I usually go grocery shopping on weekends so I usually purchase something to eat for lunch.
If you follow my snapchat (itsallzaraa) you'll know that I recently documented my process of making these 5 vegan meals for my meal prep, to those who watched what I made you'll already know what I'm about to list but for those who don't here are 5 different vegan meal prep ideas:
1. Fajita Rice Bowl - This is a super easy meal to make and is really filling and flavourful so I would certainly recommend this for people who enjoy this kind of cuisine. This is freezable and easy to store until you're ready to eat it it just needs time to cool down before you put it in the freezer! I made this with soy mince, mixed taco beans, onions, chilli, sliced bell pepper and long grain rice - you can include all sorts in this dish such as soy chicken pieces, quorn vegan steak strips, golden vegetable rice, chopped avocado or salsa.

2. Soy Chicken With Boiled Potatoes and veggies - This is a really nice meal for when you want a little roast dinner type meal, I usually make this when I know I want a healthy balanced meal. You can make a side of vegetable gravy to go with it to add a bit of a kick! This is super easy to make all you have to do is boil off your potatoes and veggies while you cook your soy chicken pieces, you then add it all together in a medium warm pan with some garlic and onions. This little tub of ingredients has a bunch of vitamins and protein in it with an added bonus of being delicious!

3. Vegan Risotto - I make this almost every week because I love it so much, it has been a beloved meal made by my Italian family for my whole life and I'm glad I learned to make it! You can make a whole variety of risottos for your meal prep including mushroom, spinach, olive, aubergine or (like mine) chickpea and lentil. I usually make this by putting the rice, lentils and chickpeas in a pan with onions, chili, garlic and some vegetable stock, it takes about 15-20 minutes to fully soften and cook but once it's done you can pop it in a tub and reheat it again when you want to eat it.
4. Vegan Meatballs & Pasta - Another lovely meal I've grown up enjoying from my Italian family's cookbook is this mealball and pasta dish, the meatballs are soy meatballs from Asda cooked in a rich tomato sauce with some tagliatelle, garlic, onions, tomatoes and peppers. It's really quick and easy to make and it's also really filling! Pasta is always one of my weekly meal prep dishes and I find new ways to put ingredients together so maybe other people can enjoy this like I do.

5. Oumph Chicken Salad - I recently started getting this spicy "chicken" from Tesco which is by a company called Oumph, they also have a pulled "pork" option that I haven't tried yet but if it's anything like this then I'll love it. This is just a simple chicken salad with a range of chopped veggies tossed into a tub and ready to eat whenever you want it, I usually use this for college as a packed lunch and it's really healthy! Just cook the "chicken" off in a pan with some onions and peppers and add it to a tub of lettuce, tomato, cucumber and jalapenos and you're done!
