Cooking With Zara (Veganuary Edition) - Vegan Friendly Mac & Cheese!

Hello all! Welcome to the third week of my Veganuary cooking posts where I share a new vegan recipe every single week in January for any new aspiring vegans. Now this recipe has been really popular and at my last count I think about 20 people have asked for it so I figured it'd be good to include on my blog! To find out more about Veganuary and what it is click HERE for information.

As some of you know I have a thread on my twitter where people can browse my vegan meals (find it HERE) and one of the posts includes this fabulous Mac & Cheese:
The recipe for this dish is found below, happy cooking!


- Macaroni pasta 300g
- 200g vegan milk (unsweetened)
- 200g vegan cheese grated (Tesco free from smoked cheese is nice for this)
- Black pepper (2 teaspoons)
- Parsley (2 teaspoons)
- Plain flour (varies based on how thick you want your sauce)
- Vegan spread/butter alternative
- (OPTIONAL) A handful of jalapeños 


1. Heat up a pan of water to boil your macaroni in, heat should be medium
2. Boil the pasta until it is partially soft.
3. Drain the pasta and put it to one side and keep your pan.
4. Put your vegan spread in the pan and warm it up to a medium heat.
5. Add your flour and stir, it will clump but don't worry about it it'll sort itself out just keep stirring it.
6. When they've mixed well add the milk and stir it on the heat until it makes a smooth consistency.
7. Add your grated cheese, parsley and black pepper.
8. Stir continuously on the heat making sure it stays on a smooth consistency.
9. When it's done pour the mixture into a large dish.
10. (OPTIONAL) Add jalapeños to the top.
11. Stick under the grill for a few minutes.
12. Let it cool a little and then serve.
Another type of Mac & Cheese I made!
I got around 8 servings out of mine because my dish was pretty deep and pasta is filling! This recipe is simple and can last a few days if you portion it out which is perfect for people like me who have a busy schedule and eat leftovers a lot, next week I'll share another recipe of mine for those looking to vegan meals so pop back next week for that!

  1. That looks so so so good! I made one attempt at vegan Mac and cheese years ago with a sadly pretty crappy cheese but I will give it a go with the cheese you suggested and let ya know what I think!
