Cooking With Zara - Lentil & Chickpea Balti!

October 02, 2017

If there's one thing I love to do its cook and eat fantastic foods, and today I have a new recipe for your spice lovers out there!

After reviewing a poll I had placed on my Twitter where people voted on the next dish for my "Cooking With Zara" segments, I got cracking on with the latest installment: Lentil & Chickpea Balti Curry. Not only is it vegan friendly but it can go with anything; rice, naan bread or poppadoms or if you're extremely hungry all 3!
For this dish you will need the following ingredients:

(Serves 2)
1. 200g Balti cooking sauce
2. 100g green lentils (you can boil dried lentils or buy them in a can from local supermarkets)
3. 10g garlic (two medium sized cloves)
4. 5g chilli
5. 170g chickpeas (again you can boil dried chickpeas or get them in a can)
6. 40g red onion
7. 1 teaspoon cumin
OPTIONAL EXTRAS: spinach, parsley, chicken pieces, celery, other beans or peas - whatever you fancy!

1. Diced your garlic, red onion and chilli and place into a pan on medium heat with olive oil.
2. Add your chickpeas and lentils and let them sizzle until fairly soft.
3. Add the cumin and stir it into the mixture while it cooks.
4. When everything is warmed through and soft add your Balti sauce and turn the heat down slightly.
5. Let it simmer for a good fifteen minutes until the sauce has warmed and marinated your ingredients, turn off the heat and serve!

I served mine with a toasted naan bread, (I was going to make rice with it but I was so hungry I couldn't wait):
