A Diet Change

As of yesterday I am officially a vegetarian! There's a few reasons why I decided to change my diet and become vegetarian, such as I don't actually enjoy the taste of meat or fish, I also feel sick every time I eat meat products lately and also I don't feel happy about eating meat or fish. I don't judge anyone's diet at all, whether you eat meat, are a vegetarian or a vegan but I personally just feel like I will be happier and a bit healthier as a vegetarian. I'm also learning to make new dishes, and change old dishes I enjoy making.

So, what have I eaten so far? Well yesterday lunch time I went to Tesco with my mum and my boyfriend Craig and we got LOADS of vegetarian foods. One of the things we purchased were Linda McCartney Mozzarella Burgers, I have never had these before and I thought they would make a great lunch.

They were absolutely gorgeous and tasted no different than a beef burger patty, I did mine in a wholemeal bun with lettuce, cheese and a bit of hummus. I would definitely make these again because they're so nice and super filling!

I also made an all vegetarian risotto whereas normally I made chicken, bacon or minced beef risotto and it was so nice! I made it completely from scratch, sauce and all with vegetable stock, olive oil and a little bit of butter. It was really enjoyable and creamy and I even took some to college today for lunch!

The things I used in my risotto to substitute for meat were; olives, chickpeas, spinach, peppers and onion. I much prefer this as it was lighter on my stomach but still filling! I'm definitely enjoying my new diet so far.

I will update my blog with further meal ideas and photos of my new vegetarian lifestyle and I would have taken a photo of the snacks my mum made for me this afternoon after college but I ate them before I realised - oops!

  3. I was pescatarian for four years and three months, and I loved veggie options! Even now that I eat meat I'll still eat veggie food, I love falafel and hummus!

  4. I've actually considered going vegetarian and pescatarian, but I just love Nandos too much LOL. I think also because I have no particular reason to be either. I look forward to seeing your updates (:

  7. I've been thinking about going vegetarian for so long as whenever i eat meat I also feel super sick!

    I've been worried about it cos I'm not sure what to eat when meat isn't involved but posts like this always inspire me so much! Brilliant post! Xx

  8. I thought you were vegan! I’ve been veggie since forever! These L McCartney burgers were my absolute favourite but I’ve noticed over time my periods have become so irregular - this is down to eating too much soya-based products. These are made from soy and since giving them up my periods have eventually returned to normal. Soya isn’t good for our hormones. I did some googling and now I’ve cut all McCartney products out of my diet. I’ve got into using Paneer lately It’s so yummy in a veggie Korma!
